With a black body mottled with distinctive yellow patches, the China rockfish is the most alluring of the rockfish. Little is known behavioral wise about the fish, but fortunately for us, we don’t need to know much about it in order to catch one. They’ve been commercially popular in China since the 19th century and are usually sold alive in markets in Asia. We’ve never eaten one, but we always like our fish fresh—whether it’s raw or cooked.
